CINCO DE MAYO RECIPE IDEAS 

Looking for a fun way to celebrate Cinco de May at home? The Klymit team has a couple fun recipe ideas for you to try this year. We're all in this together! Happy Cinco de Mayo! 

VEGAN BREAKFAST BURRITOS
Recipe from: AJ Cutler, Sales Ops Specialist 

Recipe makes:
2 burritos

Ingredients:
2 teaspoons of olive oil
1 large potato
1/2 medium zucchini
1/2 shallot
1/2 red bell pepper
2 medium mushrooms
3/4 cup chickpeas
1 handful of spinach
Salt
Pepper
2 tortillas
1/2 small avocado
1 teaspoon of sriracha
1 teaspoon of Vegenaise

How-To:
Dice zucchini, bell peppers, potatoes, mushrooms, and shallots.

Toss potatoes, bell peppers, and shallots in preheated and oiled pan

After potatoes have softened, add in zucchini and mushrooms.

Season with salt and black pepper

While vegetables are cooking, mash chickpeas

Add in mashed chickpeas to the pan.

Chop and add in spinach.

While spinach cooks down, throw a tortilla on a flat pan to heat up.

Transfer vegetables to tortilla.

Top with avocado and sriracha mayo.

Wrap and serve with salsa and fresh fruits.

Ingredients: 

1 can each, rinsed and drained:
Black bean
Black eyed peas
Corn

Chopped:

1 bunch green onion
1 medium green bell pepper
1 jalapeno
Red onion (1/2 or full, to taste)
Cilantro , to taste
4 tomatoes, remove as much juice as possible
2 avocado, optional
1 cucumber

Juice from 1 lime

1 envelope powder Italian dressing

Hot sauce (Cholula preferred, to taste)

Good over grilled chicken or just as a dip with tortilla chips
Let marinate for couple hours in fridge before eating
